Carmelo’s Wine Dinner was a true feast for the senses, featuring an exquisite four-course meal, each dish perfectly paired with a carefully selected wine.
The evening began with the Shrimp Diavolo, its spicy kick balanced by the refreshing notes of Italo Cescon Sauvignon Blanc. The wine’s crisp acidity and citrus undertones highlighted the sweetness of the shrimp, creating a harmonious first course.
Next up was the vibrant Tomato Basil Cucumber Panzanella, served with Carmelo dressing. Paired with Fattoria Le Pupille Morellino di Scansano, this course brought out the best in the fresh, earthy flavors of the salad, with the wine’s red fruit notes complementing the dish’s brightness.
The third course featured the show-stopping Veal Short Rib Pan Ange, served with creamy polenta and grilled broccolini. This rich and hearty dish was elevated by the bold and complex Castello Monaci Primitivo, whose deep berry flavors and hints of spice perfectly matched the tenderness of the veal and the creamy polenta.
